Here is how to make Brownie Cheesecake with Hazelnuts. What you are about to cook is one of the most delicious cheesecakes I have ever tried in my life, and believe me, I have tried a lot of them. Ladies & Gentleman, please put your seat-belt on because we are ready to take off. Hint: Calories of the cheesecake doesn’t count if you make it yourself.
Preparing the Brownie
Using Bain Marie(I just wanted to sound cool mentioning it but its basically a bowl sitting on top of a pan with simmering water), place chopped chocolate in a heat proof bowl. Put the bowl on top off a pan with simmering water, not boiling water. Mix the butter with the chocolate and make sure to stir it very often. When the chocolate is totally melted and blended with the butter, add the eggs yolks one by one. Make sure to stir it very fast, otherwise the egg is going to start cooking, which destroys the mixture. Later on, add the sugar with the flour. To finish it up, add vanilla extract, salt and baking powder each of them separately. Preheat the oven at 180C(350F) and bake the mixture for 25 minutes in a cheesecake pan.
Preparing the Cheesecake Mixture
In a large bowl, mix the Mascarpone(you can use cream cheese instead of Mascarpone if you are unable to find it) with sour cream. When you get a homogeneous creme, add the eggs. Mix until the eggs totally blend with the creme. Add the sugar and vanilla and mix it for approximately 10 minutes. After the brownie is cooled for 10-15 minutes, pour the cheesecake mixture on top and bake it for another 50 minutes in 160C(320F).
Preparing the Strawberry Jam
Cut the strawberries in small pieces and put them in a pan with water and sugar. Make sure the pan is on low heat. The Jam is ready when the sauce starts to thicken which takes around 30-40 minutes. It is very easy to make, but very delicious.
How to make Brownie Cheesecake with Hazelnuts
Try to make the strawberry as a flower with a small knife. It is going to take a couple of tries to perfect it. Put the blueberries and the raspberries around the strawberry together with the mint.
The cheesecake should be resting on the fridge for at least 8 hours. It is going to be better if you serve it the other day. I know, it is too much time to wait so just grab a small piece and try the masterpiece you have prepared.

Brownie
- 250 gr Chocolate
- 50 gr Flour
- 120 gr Butter
- 3 Egg Yolks
- 200 gr Sugar
- 2 tsp Vanilla
- 1/2 tsp Baking Powder
- 1/4 tsp Salt
Cheesecake Mix
- 500 gr Mascarpone
- 2 tsp Vanilla
- 250 gr Sugar
- 150 gr Sour Creme
- 2 Eggs
Strawberry Jam
- 400 gr Strawberries
- 150 gr Sugar
- 300 ml Water
Toppings
- 150 gr Hazelnuts
- 100 gr Blueberries
- 1 Strawberries
- 100 gr Raspberries
- 15 gr Mint

After the cheesecake has been cooled down for 20 minutes, try to decorate it with ground hazelnuts. Most probably, if you decorate it like I did (see the picture) your kitchen is going to be covered in hazelnuts. I addition, take the jam and put it on top as a base for the Berries.
